Penne ala Vodka Pasta Pizza

Penne alla Vodka Pasta Pizza:

Preheat oven to 400 degrees F. 

In a pot of boiling, salted water, cook 2 cups penne pasta until al dente. Drain. 

In the same pot, heat 1 tablespoon extra virgin olive oil. Add 2 teaspoons dried oregano and 2 teaspoons dried red chilli flakes (optional), and cook for about 1 minute. Add your favorite vodka sauce and the pasta. 

In a separate saucepan, cook 1 chopped red onion with 1 teaspoon oil. Add 2 cloves garlic, minced, and cook for 2 minutes, on medium heat. Add 1 16-oz can crushed tomatoes , and season with salt and crushed black pepper, and 1 teaspoon sugar. Add 2 tablespoons chopped basil, and heat sauce, stirring constantly until it begins to boil. Remove from heat and keep aside. 

Grate fresh mozzarella cheese and keep aside. 

Sprinkle a flat surface with flour, and roll out pizza dough (I used store-bought) into 6-inch rounds. Place the dough rounds on pizza grill plates. Top with the tomato sauce, pasta mixture, and grated mozzarella. Bake the pizza until the cheese is melted and the crusts are golden, about 10 minutes. 

Slice and serve! Enjoy!

*Note: You can change up the pasta shapes and jarred sauces to make other variations such as fettuccine alfredo pizzas! Adding grilled chicken or shrimp can turn the pizzas into an extraordinary treat!
